I’ve been using this 20-inch Cantonese-style steel wok for a couple of weeks now, mostly for stir-fries, fried rice, and one batch of lo mein, and it has been a very solid performer. The first thing that stood out to me is the size. This is a big wok, and that extra space really helps when you’re trying to cook over high heat without crowding the food. Vegetables stay crisper, meat browns better, and it’s much easier to toss everything together without half of it trying to escape over the rim.
The steel heats up quickly and responds fast when you adjust the burner, which is exactly what I want in a wok. Once it’s properly preheated, it does a nice job creating that seared, slightly smoky flavor you just don’t get from heavier nonstick pans. After seasoning, the surface started getting better with each use. It’s not magically nonstick right away, but eggs, rice, and sliced chicken all released much more easily after a few cooking sessions.
I also like the traditional shape. It feels made for actual wok cooking rather than just being a deep skillet with a different name. That said, because it’s 20 inches, make sure you actually have the stove space and burner output to support it. On a smaller home burner, the outer edges won’t stay as hot as the center, so you do need to cook in batches if you’re loading it up. That’s more of a reality of a wok this size than a flaw, but it’s worth knowing before you buy.
One other thing: like most carbon or steel woks, it takes a little care. You’ll need to season it, dry it thoroughly, and give it a light coat of oil after cleaning to keep rust away. If someone wants a zero-maintenance pan, this probably isn’t teh best fit. But if you enjoy cooking and want something that behaves like a real wok should, that extra upkeep is well worth it.
Overall, this has been a great addition to my kitchen. Best for people who actually want high-heat stir-fry performance and have the burner space to use a large wok properly. It’s not the most forgiving pan for beginners, but for the right cook, it works very well.
